lemon, lime, cilantro, tomatoes, cucumbers, radishes, green onions

Ingredients

2 tomatoes

bullet

2 cucumbers

bullet

2 tablespoons lemon juice

bullet

2 tablespoons lime juice

bullet

1 clove garlic, minced

bullet

1/2 teaspoon salt

bullet

1/4 cup olive oil

bullet

1/3 cup chopped cilantro

bullet

1/4 teaspoon pepper

bullet

12 ounces radishes

bullet

6 green onions

bullet

Serves 6


Step 1

Seed and chop tomatoes. Peel, seed and chop cucumbers.

Step 2

Combine lemon juice, lime juice, garlic and salt in a large bowl. Add olive oil. Beat with a fork or wire whisk until dressing is well blended. Add cilantro and pepper.

Step 3

Cop radishes. Cut green onions into thin slices.

Step 4

Add tomatoes, cucumbers, radishes and green onions to bowl. Stir well.

Money Savers

Cilantro, also called Chinese parsley or fresh coriander leaf, is sometimes difficult to find or too expensive. You can substitute chopped fresh parsley with excellent and less expensive results.


Serving Variation

For a refreshing note, add 1/3 cup chopped fresh mint to this salad just before serving.
