Ingredients
 |
3 ripe tomatoes, stewed, cored and peeled |
 |
1 med. white onion, cut into wedges |
 |
2 garlic cloves |
 |
1/4 tsp. salt |
 |
1/4 tsp. pepper |
 |
1/4 tsp. oregano |
 |
1/8 cup chiltipin |
 |
1 (8 0z.) can tomato sauce |
 |
4 oz. water |
 |
1 tablespoon oil |
 |
Makes 24 0unces or 3 cups |
Step 1
To stew tomatoes; rinse tomatoes, put into a medium sauce
pan. Cover with water and let boil. Take off heat, cool in ice water. Peel
and core. Ready to use in recipe.
Step 2
Combine stewed tomatoes, onion wedges, garlic, salt,
pepper, oregano, chiltipin, water, and
tomato sauce into a blender. Blend well.
Step 3
Pour into a medium sauce pan, add oil. Bring to a boil on
medium high heat.
Step 4
Pour into a sterilized jar. Let cool to room temperature.
Ready to eat!

You can prepare the salsa a day ahead! |

Substitute the fresh tomatoes with 14.5 oz. can stewed
tomatoes. |

This is an excellent salsa for chips, tacos, burritos,
quesadillas, carne asada, and many more dishes! Add a little lemon juice.
The juice will give it an added southwestern flair. Also it will dilute the
heat in the salsa. |
