Raisin Bread Pudding

Raisin Bread Pudding

Food items that are probably in your frig!

milk, sugar, eggs, vanilla extract, cinnamon

Ingredients

5 slices of raisin bread, cubed

bullet

2 eggs

bullet

1 1/2 cups milk

bullet

1/2 teaspoon vanilla extract

bullet

1/3 cup sugar

bullet

1/2 teaspoon cinnamon or ground nutmeg

bullet

Serves 6

Step 1

Grease a small casserole or baking dish. Cover bottom of dish with bread

Step 2

Combine eggs, milk, vanilla, sugar and cinnamon in a medium bowl: mix with a fork until frothy. Pour over bread. Let stand for 10 minutes.

Step 3

Preheat oven to 350˚F. Place dish in a large baking pan. Add enough water to reach 1 inch up the sides of the dish.

Step 4

Bake until pudding is set in center and lightly browned, about 35 minutes.

You can prepare this old-fashioned pudding dish up to 4 hours ahead. Warm in the microwave just before serving.

Money Savers

Bread pudding is a delicious and economical way to salvage most stale bread. If you do not want to buy raisin bread, use whatever bread you have on hand and add 1/2 cup of raisins in step 2.

Serving Variation

For a chocolaty treat, drizzle 1/4 cup melted semisweet chocolate over the bread in step 1.
