Chocolate-Pecan Cookies

Ingredients

4 ounces unsweetened chocolate |
 |
12 ounces semi sweet chocolate |
 |
1/4 cup butter or margarine |
 |
1 1/2 cups sugar |
 |
4 eggs |
 |
2 teaspoons vanilla extract |
 |
1 1/2 cups all-purpose flour |
 |
2 teaspoons baking powder |
 |
1/2 teaspoon salt |
 |
1 cup chopped pecans |
Step 1
Preheat oven to 350˚F. Combine chocolates and butter in a
double boiler set over hot water. Heat, stirring frequently, until melted
and well blended. Pour into a bowl. Add sugar, mix well.
Step 2
Add eggs to bowl, 1 at a time, mixing well after each
addition. Beat in vanilla. Add flour, baking powder and salt, mix well. Stir
in pecans.
Step 3
Line 2 baking sheets with foil: spray with cooking spray.
Step 4
Drop dough by 1/4 cupfuls onto baking sheets, 2 inches
apart. Bake for about 12 minutes or until firm. Cool cookies on baking
sheets for 1 minute: place on wire racks to cool completely.
