Flour, butter, sugar, eggs

Ingredients

2 cups flour

bullet

1/2 cup plus 2 tablespoons confectioner's sugar, divided

bullet

1 cup butter

bullet

4 eggs

bullet

2 cups sugar

bullet

1/3 cup fresh lemon juice

bullet

Makes 24 bars

Step 1

Preheat oven to 350' F. Mix flour and 1/2 cup confectioner's sugar in a bowl. Cut in butter using a pastry blender or 2 knives until crumbly

Step 2

Pat mixture gently into a 9x13-inch baking dish. Bake for 15 minutes or until the crust is lightly browned.

Step 3

Beat eggs, sugar and lemon juice in a bowl until smooth. Pour over crust.

Step 4

Bake for 20 minutes longer or until set. Cool on wire rack. Sprinkle with remaining confectioner's sugar. Cut into bars.

Lemons sold individually can be expensive at certain times of the year. Look for lemons in 2 1/2- to - 3-pound net bags. They are often less expensive than purchasing them as a single fruit.

For an interesting texture and flavor, add 1/2 cup flaked coconut to the filling
