Brownie Ice-Cream Sandwiches

Brownie Ice-Cream Sandwiches

Brownie mix, vanilla ice-cream, peanuts

Food items that are probably in your frig!

Ingredients

1 (15-ounce) package brown mix

bullet

1 pint vanilla or mint chocolate chip ice-cream

bullet

1/2 cup chopped peanuts

bullet

Serves 4

Step 1

Prepare and bake brownie mix according to package directions for an 8- or 9-inch square baking pan. Cool completely on a wire rack.

Step 2

Cut 2-inch square brownies. Freeze in a single layer for about 10 minutes. Let ice-cream stand at room temperature to soften.

Step 3

Place one brownie on a 6-inch piece of plastic wrap. Top with ice-cream and another brownie. Repeat with remaining brownie squares.

Step 4

Press peanuts into ice-cream around edges of sandwiches. Loosely wrap sandwiches in plastic wrap. freeze before serving.

Store ice-cream sandwiches in the freezer to have as snacks. Prepare as recipe directs and freeze brownies, individually wrapped, up to 2 weeks

Money Savers

Create another dessert with a leftover brownie and save a trip to the bakery! Crumble brownie and fold into pudding or custard. Or sprinkle brownie crumbs on top of ice-cream, frozen yogurt or fresh fruit.
 

Serving Variation
