Summertime Chicken Bundles

Ingredients
 |
1/4 cup vegetable oil, divided |
 |
4 small russet potatoes, sliced |
 |
1 green bell pepper, sliced |
 |
1 red bell pepper, sliced |
 |
2 red onions, sliced |
 |
8 boneless chicken thighs |
 |
1 teaspoon salt |
 |
1/4 teaspoon pepper |
 |
Serves 4 |
Step 1
Preheat grill or broiler. Cut 4 pieces of heavy-duty foil,
each about 18 inches long. Brush with some oil.
Step 2
Divide potatoes, bell peppers and onions among foil
sheets. Drizzle with some oil.
Step 3
Place 2 chicken thighs over vegetables on each sheet.
Drizzle remaining oil over top. Sprinkle with salt and pepper. Enclose
chicken in foil, securing tightly.
Step 4
Grill bundles over medium heat until chicken is cooked
through and tender, about 30 minutes. To serve, cut an "X" in foil. Serve
immediately.

pretty color and a mild flavor to this dish. However, you can get
equally good results when you use any sweet onions in season, such as
Maui, Texas Sweet or Vidallia. |
Serving Variation
For a colorful presentation, add 3 to 4 baby carrots to
each chicken bundle in step 2. |
