Braised Sirloin Tips

sirloin tips, beef broth, red wine, soy sauce

oil, onion, garlic, cornstarch, cooked rice

Ingredients

2 tablespoons vegetable oil

bullet

2 pounds sirloin tips, cut into 1-inch cubes

bullet

1/2 small onion, minced

bullet

1 (10-ounce) can beef broth

bullet

1/3 cup red wine or cranberry juice cocktail

bullet

2 tablespoons soy sauce

bullet

1 clove garlic, chopped

bullet

2 tablespoons cornstarch

bullet

1/4 cup water

bullet

6 cups hot cooked rice

bullet

Serves 6

Step 1

Heat oil in a large skillet over medium-high heat. Add beef and onion. Cook, stirring occasionally, until browned, about 10 minutes.

Step 2

Add broth, wine, soy sauce and garlic to skillet. Bring to a boil.

Step 3

Reduce heat to low. Cover; simmer until beef is tender, about 15 minutes.

Step 4

Combine cornstarch and water in a measuring cup. Stir into skillet. Cook, stirring, until mixture boils and thickens, about 1 minute. Serve over rice.

Prepare through step 3 up to 4 hours ahead. Refrigerate until ready to continue.

Money Savers

Use the leftover beef and rice to make a thrifty hearty soup. Combine the meat, any leftover sauce, 1 1/2 to 2 cups beef broth and up to one cup cooked rice. Cook over low heat until hot.

Serving Variation

For an Asian variation, use pork lion instead of sirloin tips.
