6 cups vegetable oil

2 large russet potatoes

bullet

1 teaspoon Cajun-style seasoned salt, divided

Serves 4

Step 1

Heat oil in a deep fryer to 360˚f, or until a bread cube browns in 1 minute. Thinly slice potatoes; place in a large bowl of ice water.

Step 2

Drain potatoes on paper towels. Sprinkle with some seasoned salt.

Step 3

Lower potatoes into deep fryer with a slotted spoon. Fry in batches until chips are golden, about 3 minutes.

Step 4

Remove chips from deep fryer with a slotted spoon. Drain on paper towels. Sprinkle with remaining seasoned salt. Place chips in a serving bowl.

Pre - Prepared Items for even Faster Serving Times

You can slice the potatoes up to 2 hours ahead. Place in an airtight container with enough water to cover.

Money Savers

Cajun seasoning is less costly when you make your own. Mix 1 teaspoon each salt, onion powder, oregano, thyme, cayenne and black pepper plus 2 teaspoons each garlic powder and paprika.

Serving Variation

Any baking potato-russet or Idaho-will work well in this recipe.
