Tropical Crunch Salad

Ingredients

1/4 cup sugar |
 |
2/3 cup pecan halves |
 |
Dressing |
 |
2/3 cup vegetable oil |
 |
Juice of 2 limes (about 1/4 cup) |
 |
2 tablespoons orange juice |
 |
2 tablespoons sugar |
 |
1 teaspoon grated lime peel |
 |
1 teaspoon grated orange peel |
 |
6 cups torn romaine lettuce |
 |
6 cups torn leaf lettuce |
 |
1 red onion, thinly sliced |
 |
1 large orange, peeled, sliced or sectioned |
 |
1 pint strawberries, hulled, halved |
 |
2 avocados, wedged |
 |
Serves 6 |
Step 1
Combine sugar and pecans in a small skillet. Cook over low
heat until sugar melts. Stir to coat pecans. Spread on aluminum foil. Let
cool. Break pecans apart.
Step 2
Meanwhile, combine vegetable oil, lime juice, orange
juice, sugar, lime peel and orange peel in a jar with a tight-fitting lid.
Cover jar; shake well to combine.
Step 3
Combine lettuces, onion, orange and strawberries in a
large bowl.
Step 4
When ready to serve, peel, pit and slice avocados. Add to
bowl. Drizzle dressing over salad. Toss gently. Top with pecans.

Money Savers If strawberries are
out of season, and unavailable, or priced too high, use 2 chopped peeled
pears instead. Even when berries are in season and priced low, pears may
be the better buy. |
Serving Variation
Spice up the pecans by adding 1/4 teaspoon each cayenne,
cinnamon and cloves in step 1. |
