Pasta with Tomato-Cream Sauce

 

Pasta with Tomato-Cream Sauce

 tomatoes, half-and-half, fresh basil

Food items that are probably in your frig!

butter, garlic, salt, pepper, spaghetti

Ingredients

4 tablespoons butter or margarine

bullet

2 cloves garlic, minced

bullet

8 large tomatoes, peeled, deseeded, chopped

bullet

1/2 teaspoon salt

bullet

1/4 teaspoon pepper

bullet

16 ounces spaghetti

bullet

3/4 cup half-and-half

bullet

2 tablespoons chopped fresh basil or 2 teaspoons dried basil

Serves 4

Step 1

Heat butter in a large skillet over medium heat. Add garlic. Cook, stirring, for 1 minute.

Step 2

Add tomatoes, salt and pepper to skillet. Cook until sauce is thickened, about 15 minutes.

Step 3

Meanwhile, cook pasta according to package directions. Drain.

Step 4

Add half-and-half and basil to skillet. Cook until mixture is slightly thickened, about 10 minutes. Divide pasta among 4 individual plates. Pour sauce over pasta.

You can prepare the sauce up to 2 hours ahead. Refrigerate until ready to reheat and serve.

Money Savers

If you have an abundance of tomatoes on hand, this sauce is super thrifty. If not, you can prepare a delicious sauce with canned tomatoes. Use 10 tomatoes and add 1/2 teaspoon sugar in step 2.

Serving Variation

For a hearty, rich lasagna, use this tomato-cream sauce in your favorite lasagna recipe.
