Salsa Roast Potatoes

Ingredients

2 pounds red potatoes, coarsely chopped

bullet

4 tablespoons salsa

bullet

2 tablespoons chopped black olives

bullet

2 tablespoons olive oil

bullet

1 teaspoon salt

bullet

1/2 teaspoon pepper

bullet

Serves 6

Step 1

Preheat oven to 425°F. Combine potatoes, salsa, olives, olive oil, salt and pepper in a large bowl; stir to coat potatoes.

Step 2

Spread potato mixture in a large backing sheet; cover with foil.

Step 3

Bake potatoes for 15 minutes. Remove foil. Stir potatoes.

Step 4

Bake potatoes, covered, until tender, about 15 minutes longer.
