Salsa Roast Potatoes

Ingredients

2 pounds red potatoes, coarsely chopped |

4 tablespoons salsa |
 |
2 tablespoons chopped black olives |
 |
2 tablespoons olive oil |
 |
1 teaspoon salt |
 |
1/2 teaspoon pepper |
 |
Serves 6 |
Step 1
Preheat oven to 425°F. Combine potatoes, salsa, olives,
olive oil, salt and pepper in a large bowl; stir to coat potatoes.
Step 2
Spread potato mixture in a large backing sheet; cover with
foil.
Step 3
Bake potatoes for 15 minutes. Remove foil. Stir potatoes.
Step 4
Bake potatoes, covered, until tender, about 15 minutes
longer.
