Oven-Fried Sweet Potatoes

oil, dried thyme, salt, pepper

Ingredients

4 sweet potatoes (about 2 1/2 pounds)

4 tablespoons vegetable oil

bullet

1/2 teaspoon dried thyme

bullet

1 teaspoon salt

bullet

1/2 teaspoon pepper

bullet

Serves 6

Step 1

Preheat oven to 450°F. Peel sweet potatoes. Cut into 1/4-inch slices.

Step 2

Place sweet potato slices in a large reusable plastic bag. Add oil, thyme, salt, and pepper. Shake bag to coat slices with oil mixture.

Step 3

Spread potato slices evenly in a single layer on 2 baking sheets. Bake for 10 minutes. Turn; bake until crisp and tender, about 5 minutes longer.

Step 4

Remove potatoes from baking sheets. Serve immediately.

Prepare sweet potatoes through step 2 up to 2 hours ahead. Store at room temperature.

Serving Variation

For a spicy variation, add 1/2 teaspoon curry powder to the recipe in step 2.
