Sour cream, cheddar cheese, relish, celery, bell pepper

Mayonnaise, milk, vinegar, mustard, onion, paprika, macaroni

Ingredients

3 cups elbow macaroni (about 10 ounces)

bullet

1/2 cup reduced-fat sour cream

bullet

1/2 cup reduced-fat mayonnaise

bullet

1/4 cup milk

bullet

1/2 cup sweet pickle relish

bullet

2 tablespoons white vinegar

bullet

2 teaspoons prepared mustard

bullet

1 cup cubed cheddar cheese (about 4 ounces)

bullet

1 cup chopped celery

bullet

1/2 cup chopped green bell pepper

bullet

1/4 cup chopped onion

bullet

1/4 teaspoon paprika

bullet

Serves 10

 

Step 1

Cook macaroni according to package directions. Drain; rinse with cold water; drain again.

Step 2

Combine sour cream, mayonnaise and milk in a large bowl; mix well. Add relish, vinegar and mustard; mix well.

Step 3

Add cooked macaroni, cheddar, celery, bell pepper and onion to bowl; mix well. Sprinkle with paprika.

Money Savers

If pickle relish is not a staple in your pantry, there is no need to buy it. You can substitute chopped sweet pickles or chopped bread-and-butter pickle chips for an equally delicious results.

Serving Variation

For a Texan twist, use 2 tablespoons chopped green chiles instead of pickle relish. Add 1/2 teaspoon crushed oregano.
