Step 1
Bring a sauce pan of water to a boil over high heat. Add
broccoli. Return to a boil and boil until broccoli is bright green and
crisp-tender, about three minutes. Drain. Cool slightly.
Step 2
Meanwhile, toast cashews in a medium skillet over
medium-high heat until fragrant and golden, about 5 minutes. Pour into a
medium bowl.
Step 3
Add broccoli, bell pepper, green onion, mayonnaise and
sesame oil to bowl with cashews. Stir well. Spread a little mixture down
center of each tortilla.
Step 4
Top each tortilla with Parmasan. Fold bottom edge of
tortilla partially over filling. Fold right side into a tight cylinder with
top end open.
