Broccoli-Nut Wraps

Shopping List

Broccoli, cashews, green onion, bell pepper, whole wheat tortillas, Parmesan cheeses, sesame oil

Mayonnaise

Ingredients

1 1/2 cups chopped broccoli florets

bullet

1/4 cup cashews

bullet

1/2  red bell pepper, diced

bullet

 1 green onion, chopped

bullet

 1/2 cup mayonnaise

bullet

1 teaspoon sesame oil

bullet

4 whole wheat tortillas

bullet

1/4 cup shredded Parmesan Cheese

bullet

Serves 4

Step 1

Bring a sauce pan of water to a boil over high heat. Add broccoli. Return to a boil and boil until broccoli is bright green and crisp-tender, about three minutes. Drain. Cool slightly.

Step 2

Meanwhile, toast cashews in a medium skillet over medium-high heat until fragrant and golden, about 5 minutes. Pour into a medium bowl.

Step 3

Add broccoli, bell pepper, green onion, mayonnaise and sesame oil to bowl with cashews. Stir well. Spread a little mixture down center of each tortilla.

Step 4

Top each tortilla with Parmasan. Fold bottom edge of tortilla partially over filling. Fold right side into a tight cylinder with top end open.

A bunch of broccoli can go a long way. Steam or sauté' the florets for a side dish at dinner. Then peel the broccoli stems and chop or slice into rounds to cook for these wholesale wraps.

Serving Variation

Add texture to this wrap by using 1 tablespoon sesame seeds instead of the sesame oil.
